    Mashing

    Combine the corn, rye, and barley in a large mash tun. Add hot water to the grains and stir to mix thoroughly. Allow the mixture to sit for 1-2 hours to convert starches into sugars.

    Fermentation

    Transfer the mash to a fermentation tank. Add the yeast and allow the mixture to ferment for 3-5 days. Monitor the temperature to ensure optimal fermentation conditions.

    Distillation

    Once fermentation is complete, transfer the liquid to a pot still. Heat the mixture to separate the alcohol from the solids, collecting the distillate as it comes off the still.

    Aging

    Transfer the distillate into charred oak barrels. Seal the barrels and store them in a temperature-controlled warehouse for a minimum of 4 years to allow the bourbon to mature.

    Bottling

    After aging, sample the bourbon to determine the flavor profile. Dilute with water if necessary to reach the desired proof, then bottle the bourbon in labeled glass bottles.
