Method

Mashing

    Prepare the Mash

    In a large mash tun, combine 8 cups of American barley malt and 1 cup of crystal malt with 3 liters of filtered water. Heat the mixture to 150°F (65°C) and maintain this temperature for 60 minutes to allow the starches to convert to sugars.

    Lautering

    After mashing, drain the liquid (wort) from the mash tun into a kettle, leaving the solid grains behind. Rinse the grains with additional water to extract as much sugar as possible.

Boiling

    Boil the Wort

    Bring the wort to a boil and maintain for 60 minutes. Stir occasionally to prevent sticking and scorching on the bottom of the kettle.

Fermentation

    Cool the Wort

    Once the boiling is complete, cool the wort quickly to around 70°F (21°C) using an immersion chiller or an ice bath.

    Add Yeast

    Transfer the cooled wort to a fermentation vessel and add 1 tsp of distiller's yeast. Seal the vessel with an airlock and store it in a cool, dark place.

    Ferment

    Allow the mixture to ferment for about 1 to 2 weeks, or until fermentation activity has ceased (bubbles in the airlock stop).

Distillation

    Distill the Wash

    After fermentation, transfer the wash to a pot still. Heat the still gently and collect the distillate (new make spirit) as it condenses.

    Collect the Hearts

    Separate the heads (the first distillate) and tails (the last distillate) from the hearts (the desirable middle portion). Collect the hearts for aging.

Aging

    Age the Spirit

    Transfer the collected hearts into new charred American oak barrels for aging. Allow the spirit to age for at least 2 years to develop its flavor.
