Method

Steak Tartare Preparation

    Prepare the Beef

    Finely dice the beef tenderloin and place it in a mixing bowl.

    Add Flavorings

    Chop the preserved lemon (removing seeds), black garlic, and chives finely, and add them to the beef.

    Mix in Condiments

    Add the miso paste, tahini, and capers to the beef mixture. Season with salt and black pepper to taste.

    Incorporate the Egg Yolk

    Gently mix in the egg yolk until all ingredients are well combined.

Crispy Potato Pave Preparation

    Prepare the Potatoes

    Peel and thinly slice the potatoes into even rounds.

    Layer the Potatoes

    In a greased baking dish, layer the potato slices, overlapping them slightly. Season each layer with salt.

    Add Butter and Oil

    Melt the butter and mix it with olive oil. Drizzle this mixture over the layered potatoes.

    Bake the Pave

    Cover with aluminum foil and bake at 180°C (350°F) for about 30 minutes. Remove the foil and bake for an additional 15 minutes or until golden brown.

    Cool and Slice

    Once baked, allow the potato pave to cool slightly before slicing into squares.

Garlic Furikake Preparation

    Prepare Nori

    Toast the nori sheet over an open flame or in a skillet until crisp, then crumble it into small pieces.

    Combine Ingredients

    In a bowl, mix the crumbled nori, sesame seeds, garlic powder, and salt until well combined.
