Steak Preparation

    Prepare the Steak

    Remove the ribeye steaks from the refrigerator and allow them to come to room temperature for about 30-40 minutes before cooking. This ensures even cooking.

    Season the Steak

    Generously season both sides of the steaks with salt and black pepper. Make sure to rub the seasoning into the meat for better flavor.

    Heat the Pan

    In a large cast-iron skillet or frying pan, heat the olive oil over medium-high heat until it shimmers. This will create a nice sear on the steak.

    Sear the Steak

    Once the oil is hot, carefully place the steaks in the pan. Sear for about 4-5 minutes on one side without moving them, until a golden-brown crust forms.

    Flip and Add Aromatics

    Flip the steak using tongs and add the smashed garlic cloves and rosemary sprigs to the pan. Cook for an additional 3-4 minutes.

    Baste with Butter

    Add the butter to the pan. As it melts, use a spoon to baste the steak with the melted butter for enhanced flavor. Cook until the steak reaches your desired level of doneness, about 130°F for medium-rare.

    Rest the Steak

    Once cooked, remove the steak from the pan and place it on a cutting board. Cover loosely with aluminum foil and let it rest for 5-10 minutes.

    Slice and Serve

    After resting, slice the steak against the grain into thick pieces. Serve immediately, optionally with the pan juices drizzled on top.
