Sage Shortbread

    Prepare the Dough

    In a large mixing bowl, cream together the unsalted butter and powdered sugar until light and fluffy. Add in the finely chopped sage leaves and sea salt, mixing until well combined.

    Gradually add the all-purpose flour to the butter mixture, mixing until a soft dough forms. Be careful not to overmix.

    Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

    Bake the Shortbread

    Preheat your oven to 350°F (175°C). Roll out the chilled dough on a lightly floured surface to about 1/4-inch thickness. Cut into desired shapes and place on a baking sheet lined with parchment paper. Bake for 12-15 minutes or until the edges are lightly golden.

    In another bowl, whip the heavy cream until soft peaks form.

    Gently fold the whipped cream into the goat cheese mixture until well incorporated.

Strawberry Balsamic Compote

    In a saucepan, combine the sliced strawberries, balsamic vinegar, and granulated sugar over medium heat. Cook for about 10 minutes, stirring occasionally, until the strawberries release their juices.

Popcorn Ice Cream
