Preparing the Snapper

Season the Snapper
Preheat your oven to 400°F (200°C). Season the snapper fillets with salt and black pepper on both sides.

Sear the Snapper
In a large oven-safe skillet, heat olive oil over medium-high heat. Once hot, add the snapper fillets, skin side down, and sear for about 3-4 minutes until the skin is crispy.

Roast the Snapper
Transfer the skillet to the preheated oven and roast for an additional 10-12 minutes until the fish is cooked through and flakes easily.

Blend the Purée
Add the rehydrated porcini mushrooms, vegetable broth, heavy cream, salt, and pepper to the saucepan. Cook for another 5 minutes, then blend until smooth. Adjust seasoning if necessary.
Preparing the Roasted Corn Salsa

In a skillet over medium heat, add fresh corn kernels. Sauté for 5-7 minutes until slightly charred.

In a bowl, mix roasted corn, diced red bell pepper, diced red onion, chopped cilantro, lime juice, and salt. Stir to combine.
