Preparing the Habanero Saffron Butter

Melt the Butter
In a saucepan over low heat, melt the unsalted butter until it’s completely liquid.

Add Habanero and Saffron
Finely chop the habanero pepper (remove seeds for less heat) and add it to the melted butter along with the saffron threads. Stir well and let it infuse for about 10 minutes.

Mix in Lime Juice and Salt
Remove the saucepan from heat, add lime juice, and season with salt to taste. Set aside to cool.
Making the Cucumber Cilantro Lime Granita

Prepare the Cucumber
Peel and chop the cucumber into small pieces.

Freeze the Mixture
Pour the mixture into a shallow dish and place it in the freezer. Every 30 minutes, use a fork to scrape and stir the mixture to create a flaky texture. Repeat until fully frozen, about 2-3 hours.
Preparing and Serving the Oysters

Shuck the Oysters
Carefully shuck the fresh oysters, keeping the liquid in the shells. Place them on a bed of ice to keep them cold.

Top with Habanero Saffron Butter
Spoon a small amount of the habanero saffron butter over each oyster.

Serve the oysters immediately on ice for the best presentation and taste.
