Method
Mashing
- 1
Prepare the Grain Mixture
In a large mixing vessel, combine 60 cups of corn, 30 cups of rye, and 10 cups of barley. Mix thoroughly to ensure an even distribution of the grains.
- 2
Add Water
Pour 200 liters of filtered water into the grain mixture. Stir well to ensure all grains are saturated with water.
- 3
Heat the Mash
Heat the mixture to approximately 150°F (65°C) and maintain this temperature for about 60 minutes. Stir occasionally to prevent sticking.
- 4
Cool the Mash
After 60 minutes, cool the mash to around 70°F (21°C) to prepare for fermentation.
Fermentation
- 5
Add Yeast
Once the mash has cooled, add 0.5 cups of distiller's yeast to the mixture. Stir gently to incorporate the yeast into the mash.
- 6
Ferment the Mash
Cover the vessel with a clean cloth and allow it to ferment for 5-7 days at room temperature. Monitor the fermentation process for bubbles indicating active fermentation.
Distillation
- 7
Distill the Mash
After fermentation is complete, transfer the mash to a still. Distill the mash according to your distillation method, collecting the distillate as it comes off the still.
- 8
Collect the Spirit
Collect the spirit at approximately 140-160 proof, adjusting for desired flavor and strength.
