Mashing

Prepare the Mash
Combine the corn, rye, and malted barley in a large mash tun. Add 10 liters of water heated to approximately 150°F (65°C) to the grain mixture.

Mashing Process
Allow the mixture to mash for about 2 hours, maintaining the temperature. Stir occasionally to ensure even cooking.
Fermentation

Cool the Mash
After mashing, cool the mixture to around 70°F (21°C).

Add Yeast
Sprinkle the yeast over the cooled mash and stir gently to incorporate. Cover with a cloth and let ferment for 3 to 5 days.
Distillation

Distill the Wash
Once fermentation is complete, transfer the wash to a still. Distill the wash until you reach an alcohol content of around 140 proof.
Aging

Fill the Barrel
Pour the distilled spirit into a new charred oak barrel for aging.

Age the Bourbon
Allow the bourbon to age in the barrel for at least 4 years, monitoring the flavor and color development.
Bottling

Bottle the Bourbon
After aging, remove the bourbon from the barrel, filter it if necessary, and bottle it for consumption.
