Preparation

  1. 1

    Prepare the Chicken

Preheat your oven to 400°F (200°C). In a bowl, mix olive oil, minced garlic, thyme, lemon juice, salt, and black pepper to create a marinade.

  2. 2

    Marinate the Chicken

Place chicken breasts in a shallow dish and pour the marinade over them. Let them marinate for at least 30 minutes, or up to 2 hours for more flavor.

  3. 3

    Prepare the Vegetables

While the chicken is marinating, wash the asparagus and cherry tomatoes. Trim the ends of the asparagus and place them on a baking sheet.

Cooking

  1. 4

    Bake the Chicken

Once marinated, place the chicken breasts on a separate baking sheet. Bake in the preheated oven for 25-30 minutes, or until the internal temperature reaches 165°F (74°C).

  2. 5

    Roast the Vegetables

Drizzle the asparagus with balsamic vinegar, sprinkle with salt and pepper, and toss the cherry tomatoes on the same baking sheet. Roast for 15-20 minutes, or until the asparagus is tender.

Serving

  1. 6

    Plate the Dish

Once the chicken is cooked and the vegetables are roasted, place the chicken breasts on a plate and arrange the asparagus and cherry tomatoes around it.

  2. 7

    Garnish

Sprinkle with grated Parmesan cheese and serve immediately.
