For the Crispy Quinoa Crust

Cook the Quinoa
Rinse the quinoa under cold water. In a medium saucepan, bring 2 cups of water to a boil. Add the rinsed quinoa and a pinch of salt. Reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and water is absorbed. Remove from heat and let it cool.

Prepare the Tuna
Season the tuna steaks with salt and black pepper on both sides. Once the quinoa has cooled, press the quinoa onto the surface of the tuna steaks to create a crust.

For the Pistachio Butter

Blend the Pistachios
In a food processor, combine the pistachios, olive oil, salt, and water. Blend until smooth, scraping down the sides as necessary. Adjust the consistency with more water if needed.
