Method
Preparation
- 1
Prepare the Apples
Wash and core the apples, then chop them into small pieces. You should have about 10 cups of chopped apples to use for the brandy.
- 2
- 3
Cool the Mixture
Remove the pot from the heat and let the mixture cool to room temperature.
- 4
Fermentation
- 5
Ferment the Mixture
After 24 hours, transfer the apple mixture to a fermentation vessel, ensuring there is enough space for bubbling. Seal the vessel with an airlock and let it ferment for 1-2 weeks, or until bubbling slows significantly.
Distillation
- 6
Distill the Fermented Mixture
Once fermentation is complete, pour the fermented apple mixture into a still. Heat it slowly to distill the liquid. Collect the distillate, which will be the raw apple brandy.
Aging
- 7
Age the Brandy
Transfer the distilled apple brandy into oak barrels for aging. Allow it to age for at least 6 months to develop flavors. The longer it ages, the more complex the flavors will become.
