Mousse Preparation

    Melt Chocolate and Butter

    In a heatproof bowl over a pot of simmering water (double boiler), melt the dark chocolate and unsalted butter together, stirring until smooth. Remove from heat and let it cool slightly.

    Whisk Egg Yolks

    In a separate bowl, whisk the egg yolks and granulated sugar together until the mixture becomes pale and creamy. Add the vanilla extract and a pinch of salt.

    Combine Mixtures

    Gradually add the melted chocolate mixture into the egg yolk mixture, stirring continuously until well combined.

    Beat Egg Whites

    In a clean bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.

    Chill Mousse

    Divide the mousse mixture into serving glasses or bowls and refrigerate for at least 2 hours until set.

Whipped Cream Preparation

    In a mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract. Using an electric mixer, beat the mixture on medium-high speed until soft peaks form.

    Once the mousse has set, top each serving with a dollop of whipped cream before serving.
