Base Ingredients

Sweetening Ingredients

Method

Infusion

  1. 1

    Prepare the Botanicals

In a clean, dry container, combine the juniper berries, coriander seeds, angelica root, lemon peel, cinnamon stick, and cardamom pods.

  2. 2

    Add Water

Pour 4 cups of water over the botanicals in the container. Ensure that all ingredients are submerged.

  3. 3

    Let it Sit

Seal the container and let it sit for 24 hours to allow the flavors to infuse into the water.

Distillation

  1. 4

    Strain the Mixture

After 24 hours, strain the mixture through a fine sieve or cheesecloth to remove the solid botanicals, collecting the liquid in a clean pot.

  2. 5

    Distill the Liquid

Transfer the strained liquid to a pot still. Heat gently to distill and capture the vapor, which will condense back into liquid form.

  3. 6

    Collect the Gin

Collect the distillate in a clean container. This is your base gin.

Sweetening

  1. 7

    Add Honey for Sweetness

Once the gin has cooled, stir in 0.5 cups of raw honey until it is fully dissolved.

Bottling

  1. 8

    Bottle the Gin

Pour the finished gin into clean bottles and seal tightly. Store in a cool, dark place.

  2. 9

    Serve

Your homemade Barr Hill Gin is ready to enjoy! Serve it neat or use it in your favorite cocktails.
