Heirloom Tomatoes Preparation

    Prepare the Tomatoes

    Slice the heirloom tomatoes into thick slices. Drizzle with olive oil, and sprinkle with salt and black pepper. Set aside to marinate while you prepare the other components.

Charred Shishito Peppers Preparation

    Char the Peppers

    Heat a grill or grill pan over medium-high heat. Toss the shishito peppers with olive oil and salt. Grill the peppers for about 5-7 minutes, turning occasionally, until they are blistered and charred. Remove from heat and set aside.

Pepita Pesto Preparation

    Make the Pepita Pesto

    In a food processor, combine pumpkin seeds, basil leaves, garlic, Parmesan cheese, olive oil, lemon juice, and salt. Blend until smooth. Adjust seasoning to taste and set aside.

Chipotle-Lime Sorbet Preparation

    Prepare the Sorbet

    In a saucepan, combine water and sugar. Heat over medium heat, stirring until the sugar dissolves. Remove from heat and add lime juice and chipotle chili powder. Let it cool, then pour it into an ice cream maker and churn according to manufacturer instructions until it reaches a sorbet consistency. Freeze until firm.

Assembly

    Plate the Dish

    On a serving plate, arrange the marinated heirloom tomatoes and charred shishito peppers. Tear the burrata cheese and place it in the center. Drizzle the pepita pesto over the top and serve with a scoop of chipotle-lime sorbet on the side.
