Preparation of Cempesúchil

    Prep the Cempesúchil Flowers

    Rinse the Cempesúchil flowers thoroughly under cold running water to remove any dirt or insects. Pat dry with a clean towel.

    Boil the Flowers

    In a large pot, bring 4 cups of water to a boil. Once boiling, add the cleaned Cempesúchil flowers and allow them to simmer for 10 minutes.

Making the Syrup

    Strain the Flowers

    After 10 minutes, remove the pot from heat and strain the liquid through a fine mesh sieve into a clean bowl, discarding the flowers.

    In the same pot, combine the strained liquid, sugar, lime juice, cinnamon stick, and cloves. Bring to a gentle simmer over medium heat and stir until the sugar is completely dissolved.

    Once the sugar is dissolved, add the vanilla extract. Allow the mixture to simmer for an additional 5 minutes, then remove from heat and let it cool.

Serving

    Once cooled, transfer the syrup to a bottle or jar and refrigerate for at least 1 hour. Serve chilled over ice, garnished with mint leaves and lime slices if desired.
