Cook the Spaghetti
Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.

Prepare the Pancetta
In a large skillet, heat olive oil over medium heat. Add pancetta and cook until crispy, about 4-5 minutes. Remove from heat.

Mix Eggs and Cheese
In a mixing bowl, whisk together eggs, grated Parmesan cheese, and a generous amount of black pepper.

Combine Pasta and Pancetta
Add the drained spaghetti to the skillet with pancetta. Toss to combine and allow it to cool slightly.

Create the Sauce
Pour the egg and cheese mixture over the spaghetti, tossing quickly to coat. Add reserved pasta water a little at a time until you reach a creamy consistency.

Serve
Season with additional salt and black pepper to taste. Serve immediately with extra Parmesan cheese on top.
