Preparing the Candied Bacon

Cook the Bacon
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper. Lay the bacon slices on the sheet and bake for about 15 minutes or until they start to become crispy.

Add Sugar and Maple Syrup
Remove the bacon from the oven and sprinkle brown sugar evenly over each slice. Drizzle maple syrup on top. Return to the oven and bake for another 10-15 minutes until the bacon is caramelized. Let it cool and then chop into pieces.
Assembling the Salad

Prepare the Salad Base
Cut the iceberg lettuce into quarters and place each wedge on a plate. Halve the cherry tomatoes and slice the red onion thinly.

Make the Dressing
In a small bowl, mix together the blue cheese, olive oil, red wine vinegar, salt, and black pepper until well combined.

Combine and Serve
Drizzle the blue cheese dressing over each wedge of lettuce. Top with cherry tomatoes, red onion slices, and the chopped candied bacon. Serve immediately.
