Wagyu Burger

Prepare the Patties

Season the Wagyu beef patties with salt and black pepper on both sides. Preheat a grill or skillet over medium-high heat.

Cook the Patties

Cook the patties for about 4-5 minutes on each side, or until desired doneness. During the last minute of cooking, place a slice of Shelburne Farms Cheddar on each patty to melt.

Toast the Buns

Lightly toast the burger buns on the grill or in a skillet until golden brown.

Fried Pickles

Prepare the Breading

In a bowl, mix the flour and cornmeal. In another bowl, whisk the egg and milk together.

Fry the Pickles

Dip pickle slices into the egg mixture, then coat in the flour mixture. Heat vegetable oil in a deep skillet to 375°F (190°C). Fry the pickles until golden brown, about 3-4 minutes. Drain on paper towels.

Bacon Aioli

Mix the Aioli

In a bowl, combine mayonnaise, crumbled bacon, minced garlic, lemon juice, salt, and black pepper. Mix well until smooth. Set aside.

Hand Cut Herb Fries

Prepare the Potatoes

Wash and cut the russet potatoes into fries. Soak in cold water for 30 minutes, then drain and pat dry.

Bake the Fries

Preheat the oven to 425°F (220°C). Toss the fries with olive oil, fresh herbs, salt, and black pepper. Spread on a baking sheet and bake for 25-30 minutes, flipping halfway through, until crisp.
