Season the Steak
Remove the porterhouse steak from the refrigerator and allow it to come to room temperature for about 30 minutes. Preheat your grill or skillet over high heat. Season both sides of the steak generously with salt and black pepper.

Sear the Steak
Add the olive oil to the grill or skillet. Once hot, place the steak onto the grill or skillet. Sear for about 4-5 minutes on each side for medium-rare, or until it reaches your desired doneness. Use a meat thermometer to check the internal temperature; 130°F (54°C) is recommended for medium-rare.

Add Flavor
During the last minute of cooking, add the fresh rosemary and crushed garlic cloves to the skillet for extra flavor. Baste the steak with the infused oil.

Rest and Serve
Remove the steak from the heat and let it rest for 10 minutes before slicing. This allows the juices to redistribute. Serve with your choice of sides.
