Method

Prepare the Crab

    Mix Crab Ingredients

    In a bowl, combine the fresh crab meat, lemon juice, salt, and black pepper. Gently mix to combine and set aside.

Make Avocado Salad

    Combine Salad Ingredients

    In a separate bowl, cube the ripe avocados and add them to the bowl along with cherry tomatoes, red onion, cilantro, olive oil, salt, and black pepper. Toss gently to combine.

Prepare Parmesan Crisps

    Bake Parmesan Crisps

    Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. Place small mounds of grated Parmesan cheese on the sheet, flattening them slightly. Bake for 5-7 minutes or until golden brown. Remove and let cool.

Make Sun Dried Tomato Vinaigrette

    Blend Vinaigrette

    In a blender, combine the sun dried tomatoes, balsamic vinegar, olive oil, honey, salt, and black pepper. Blend until smooth and set aside.

Assemble the Dish

    Layer Ingredients

    On a serving plate, layer the crab mixture and avocado salad alternatively to create a Napoleon effect. Top with Parmesan crisps and drizzle with sun dried tomato vinaigrette before serving.
