Method

Prepare the Broth

  1. 1

    Sauté the Vegetables

In a large pot, heat olive oil over medium heat. Add minced garlic, diced onion, carrot, and celery. Sauté until softened, about 5-7 minutes.

  2. 2

    Add Tomatoes and Spices

Stir in the crushed tomatoes, fish stock, oregano, red pepper flakes, salt, and black pepper. Bring to a simmer and cook for 10 minutes.

Cook the Seafood

  1. 3

    Add Seafood

Add the cod filet, shrimp, mussels, and calamari to the broth. Cover and cook for about 5-7 minutes, or until the seafood is cooked through and mussels have opened.

Prepare the Grilled Bread

  1. 4

    Grill the Bread

While the seafood is cooking, brush baguette slices with olive oil and grill them until golden brown on both sides.

Serve

  1. 5

    Plate the Dish

Ladle the cioppino into bowls, garnish with chopped parsley, and serve with grilled bread on the side.
