Filet Mignon

    Prepare the Steak

    Season the filet mignon steaks with salt and black pepper on both sides. Heat olive oil in a skillet over medium-high heat. Sear the steaks for 4-5 minutes on each side for medium-rare, adding butter in the last minute of cooking for flavor. Remove from heat and let rest.

    Prepare the Potatoes

    Boil the potatoes until fork-tender. In the last 10 minutes, add garlic cloves to the pot. Drain and mash the potatoes and garlic together. Mix in butter, milk, salt, and pepper until creamy.

Crispy Onions

    Fry the Onions

    Slice the onion thinly and soak in buttermilk for at least 30 minutes. Dredge in flour and fry in hot oil until golden and crispy. Remove and drain on paper towels.

Demi Glaze

    Make the Sauce

    In a saucepan, combine beef stock, red wine, shallots, thyme, salt, and pepper. Simmer over medium heat until reduced by half and thickened.
