Cooking Pasta

Boil the Pasta
In a large pot, bring water to a boil. Add a pinch of salt and the pasta. Cook according to package instructions until al dente, approximately 10-12 minutes. Stir occasionally to prevent sticking.

Drain and Set Aside
Once cooked, drain the pasta in a colander and set aside. Do not rinse.
Preparing Vegetables

Chop the Vegetables
While the pasta is cooking, wash and chop the bell peppers, zucchini, and carrots into bite-sized pieces. Halve the cherry tomatoes.

Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Then add the chopped bell peppers, zucchini, and carrots. Cook for about 5 minutes until they start to soften, stirring occasionally.

Add Spinach and Tomatoes
Add the cherry tomatoes and spinach to the skillet. Cook for an additional 2-3 minutes until the spinach wilts and the tomatoes are slightly softened.
Combining Ingredients

Mix Pasta and Vegetables
Add the drained pasta to the skillet with the sautéed vegetables. Toss to combine everything evenly.

Season the Dish
Season with salt and black pepper to taste. Toss again to ensure the pasta is well-coated with the olive oil and vegetables.

Serve with Parmesan
Remove from heat and transfer to serving plates. Sprinkle grated Parmesan cheese over the top before serving.
