Directions
Cook the Spaghetti
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes.
Prepare the Pancetta
While the pasta is cooking, heat a large skillet over medium heat. Add the pancetta and cook until it's crispy and golden brown, about 5-7 minutes. Stir occasionally to ensure even cooking.
Mix the Sauce
In a mixing bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined. Set aside.
Create the Creamy Sauce
Pour the egg and cheese mixture over the hot spaghetti, tossing quickly to combine. The residual heat will cook the eggs and create a creamy sauce. If the sauce is too thick, add a little reserved pasta water to reach desired consistency.
Serve
Taste the carbonara and adjust seasoning with salt and additional black pepper if needed. Serve immediately with extra Parmesan cheese on the side.
