Method
Fried Calamari
Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.
Prepare the Breading
In a large mixing bowl, combine the flour, cornstarch, salt, black pepper, paprika, and garlic powder.
Dunk in Buttermilk
In another bowl, whisk together the eggs and buttermilk. Dip each calamari ring in the buttermilk mixture, allowing excess to drip off.
Coat with Dry Mixture
Immediately dredge the dipped calamari in the flour mixture, ensuring they are evenly coated. Shake off any excess flour.
Heat Oil
In a deep skillet or fryer, heat the vegetable oil to 350°F (175°C).
Fry the Calamari
Carefully add the coated calamari to the hot oil in batches, frying for 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.
Marinara Sauce
Add Tomatoes and Seasonings
Add the crushed tomatoes, oregano, salt, black pepper, and sugar. Stir to combine.
Simmer
Bring the sauce to a simmer, then reduce the heat to low and let it cook for 15-20 minutes, stirring occasionally.
Add Fresh Basil
Stir in the fresh basil leaves just before serving to enhance the flavor.
