Crust Preparation
Combine Dry Ingredients
In a medium bowl, mix together the graham cracker crumbs and sugar until well combined.
Add Butter
Pour the melted butter into the crumb mixture and stir until all the crumbs are evenly coated.
Form the Crust
Press the mixture firmly into the bottom of a 9-inch pie dish to form an even crust. Bake at 350°F (175°C) for 10 minutes.
Cool the Crust
Remove the crust from the oven and allow it to cool completely before adding the filling.
Filling Preparation
Beat Cream Cheese
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
Add Sweetness and Flavor
Gradually add the powdered sugar and vanilla extract, mixing until fully incorporated and smooth.
Whip Cream
In a separate bowl, whip the heavy cream until stiff peaks form.
Combine Mixtures
Gently fold the whipped cream into the cream cheese mixture until fully combined. Be careful not to deflate the whipped cream.
Pour Filling
Spread the filling evenly over the cooled crust and smooth the top with a spatula.
Chill
Refrigerate the dessert for at least 4 hours, or until set.

Wash and slice the fresh fruit as desired.
Garnish
Once the dessert is set, top it with the fresh fruit and mint leaves.
Dust with Sugar
Lightly dust the top of the dessert with additional powdered sugar before serving.
