Cheese Curds

Method

Preparation

  1. 1

    Prepare the batter

In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and garlic powder. Mix well until all dry ingredients are evenly distributed.

  2. 2

    Add the sparkling water

Slowly pour in the cold sparkling water into the dry ingredients while whisking continuously. This will create a light and fluffy batter. Mix until just combined; avoid overmixing.

  3. 3

    Heat the oil

In a deep frying pan or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test if the oil is ready by dropping a small amount of batter into the oil; if it bubbles and rises, it's ready.

Frying the Cheese Curds

  1. 4

    Coat the cheese curds

Take the fresh cheese curds and dip them into the batter, ensuring they are fully coated.

  2. 5

    Fry the cheese curds

Carefully drop the battered cheese curds into the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes or until they are golden brown and crispy.

  3. 6

    Drain and serve

Use a slotted spoon to remove the cheese curds from the oil and place them on a plate lined with paper towels to drain excess oil. Serve warm with your favorite dipping sauce.
