Begin by slicing the dried beef into small pieces and soaking it in water for about 30 minutes to soften.

In a large skillet, heat the canola oil over medium heat. Add the chopped large onion and sauté until translucent.

Add Tomatoes
Add the chopped tomatoes to the skillet and cook until they break down and form a sauce, about 5-7 minutes.

Stir in the berbere spice mix and minced garlic, cooking for an additional 2-3 minutes until fragrant.

Drain the soaked beef and add it to the skillet. Mix well to coat the beef with the sauce. Cook for about 10 minutes, allowing the flavors to meld.
