Breakfast Potatoes

    Prepare the Potatoes

    Peel and dice the Russet potatoes into small cubes.

    Season the Potatoes

    In a large bowl, toss the diced potatoes with olive oil, paprika, garlic powder, salt, and black pepper until evenly coated.

    Cook the Potatoes

    Heat a skillet over medium heat and add the seasoned potatoes. Cook for about 15-20 minutes, stirring occasionally, until they are golden brown and cooked through.

Veggie Patty

    Cook the Veggie Patty

    In the same skillet, after the potatoes are cooked, add the Hungry Planet veggie patty and cook according to package instructions, usually about 4-5 minutes on each side until heated through.

Meatless Chili

    Cook the Onion and Garlic

    In a pot over medium heat, sauté the chopped onion and minced garlic until translucent, about 3-4 minutes.

    Add the canned kidney beans, diced tomatoes, chili powder, cumin, and vegetable broth. Stir well to combine.

    Simmer the Chili

    Bring the mixture to a boil, then reduce heat and let it simmer for about 15 minutes. Season with salt and black pepper to taste.

Gouda Jalapeno Cheese Sauce

    Prepare the Cheese Sauce

    In a saucepan over medium heat, combine milk and cornstarch, stirring until smooth.

    Slowly add the shredded Gouda cheese and diced jalapeno, stirring continuously until melted and smooth. Season with salt to taste.

Sunny Side Up Egg

    In a small non-stick skillet, melt butter over medium-low heat. Crack the egg into the skillet and cook until the white is set but the yolk is still runny, about 2-3 minutes.

Assembling the Dish

    On a plate, layer the breakfast potatoes, followed by the veggie patty. Smother with the meatless chili, drizzle the gouda jalapeno cheese sauce on top, and finish with the sunny side up egg.
