Method
Biscuits
- 1
Preheat Oven
Preheat your oven to 450°F (232°C).
- 2
Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, and salt.
- 3
Cut in Butter
Add the cold unsalted butter to the dry ingredients and use a pastry cutter or your fingers to cut it into the flour until the mixture resembles coarse crumbs.
- 4
Add Buttermilk
Make a well in the center of the mixture and pour in the buttermilk. Stir gently until just combined; do not overmix.
- 5
Shape Biscuits
Turn the dough out onto a floured surface and gently knead it about 5-6 times. Pat the dough into a 1-inch thick round. Use a biscuit cutter to cut out biscuits.
- 6
Bake
Place the biscuits on a baking sheet and bake for 12-15 minutes, or until golden brown.
Gravy
- 7
Melt Butter
In a large skillet, melt 4 tablespoons of unsalted butter over medium heat.
- 8
Make Roux
Whisk in the all-purpose flour and cook for about 2 minutes, stirring constantly until it turns light golden brown.
- 9
Add Broth and Seasonings
Slowly whisk in the vegetable broth, soy sauce, black pepper, and nutmeg. Continue to whisk until the mixture thickens, about 5-7 minutes.
- 10
Season to Taste
Taste the gravy and add salt as needed.
Eggs
- 11
Cook Eggs
In a small frying pan, heat 1 tablespoon of olive oil or butter over medium heat. Crack the eggs into the pan and cook them to your desired doneness (sunny-side up, over-easy, or scrambled). Season with salt and black pepper to taste.
