Prepare the Breakfast Potatoes

Cook the Potatoes
Peel and cube the potatoes. In a large skillet, heat olive oil over medium heat. Add the cubed potatoes and season with paprika, garlic powder, onion powder, salt, and black pepper. Cook, stirring occasionally, until the potatoes are golden brown and tender, about 15-20 minutes.

Prepare the Chili
In a medium pot, heat olive oil over medium heat. Add diced onion and sauté until translucent. Stir in black beans, diced tomatoes, chili powder, cumin, salt, and black pepper. Simmer for about 10-15 minutes to allow the flavors to meld.
Prepare the Gouda Jalapeno Cheese Sauce

Make the Cheese Sauce
In a saucepan, melt butter over medium heat. Whisk in the flour and cook for about 1 minute. Gradually add milk, whisking continuously until the mixture thickens. Stir in the shredded gouda cheese and diced jalapeno, and cook until the cheese is melted and smooth. Season with salt.

Fry the Egg
In a non-stick skillet, melt butter over medium-low heat. Crack the egg into the skillet and cook until the white is set but the yolk is still runny, about 3-4 minutes.
