Stuffed Mushrooms

    Prepare the Mushrooms

    Preheat the oven to 375°F (190°C). Clean the mushrooms with a damp cloth and remove the stems. Set the caps aside and finely chop the stems.

    Cook Bacon and Vegetables

    In a skillet over medium heat, cook the bacon until crispy. Remove and chop into small pieces. In the same skillet, add olive oil, garlic, and onion. Sauté until the onion is translucent.

    Combine Filling

    In a bowl, mix the chopped bacon, sautéed garlic and onion, chopped mushroom stems, cream cheese, and parmesan cheese. Season with salt and black pepper.

    Stuff the Mushrooms

    Fill each mushroom cap with the prepared filling. Arrange the stuffed mushrooms on a baking sheet.

    Bake

    Bake the stuffed mushrooms in the preheated oven for 20-25 minutes or until golden and heated through.

Arugula & Cherry Tomato Salad

    Prepare the Salad

    In a large bowl, combine arugula and halved cherry tomatoes.

    Dress the Salad

    Drizzle with balsamic vinegar and truffle oil. Season with salt and black pepper. Toss gently to combine.
