Method
Pasta Preparation
- 1
Cook the Fettuccine
Bring a large pot of salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Stir occasionally to prevent sticking.
- 2
Drain and Set Aside
Once cooked, drain the pasta and reserve about 1 cup of the pasta water. Set the pasta aside.
Chicken Preparation
- 3
Season the Chicken
While the pasta is cooking, season the chicken breasts with olive oil, garlic powder, salt, and black pepper on both sides.
- 4
Grill the Chicken
Preheat a grill or grill pan over medium heat. Grill the chicken for about 6-7 minutes on each side, or until fully cooked (internal temperature of 165°F). Remove from heat and let rest for a few minutes before slicing.
Alfredo Sauce Preparation
- 5
- 6
Add Cream and Cheese
Pour in the heavy cream and bring to a gentle simmer. Gradually whisk in the grated Parmesan cheese until melted and the sauce is smooth. Season with salt and black pepper to taste.
- 7
Combine with Pasta
Add the cooked fettuccine to the sauce and toss to coat evenly. If the sauce is too thick, add some reserved pasta water, a little at a time, until the desired consistency is reached.
Assembly
- 8
Serve the Dish
Slice the grilled chicken and place it on top of the fettuccine Alfredo. Garnish with chopped parsley, if desired, and serve immediately.
