For the Calamari

Method

For the Calamari

  1. 1

    Prepare the Calamari

Rinse the calamari rings under cold water and pat them dry with paper towels.

  2. 2

    Set Up Breading Station

In a shallow bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, and garlic powder. In another bowl, whisk together the eggs and milk until combined.

  3. 3

    Bread the Calamari

Dip each calamari ring into the egg mixture, allowing excess to drip off, then dredge in the flour mixture, ensuring they are well coated.

  4. 4

    Heat the Oil

In a large heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C).

  5. 5

    Fry the Calamari

Fry the calamari in batches for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

For the Marinara Sauce

  1. 6

    Heat the Olive Oil

In a medium saucepan, heat the olive oil over medium heat.

  2. 7

    Sauté the Garlic

Add the minced garlic to the pan and sauté for 1-2 minutes until fragrant, being careful not to burn it.

  3. 8

    Add the Tomatoes and Spices

Stir in the crushed tomatoes, oregano, basil, salt, black pepper, red pepper flakes, and sugar. Bring to a simmer.

  4. 9

    Simmer the Sauce

Let the sauce simmer for about 15-20 minutes, stirring occasionally. Adjust seasoning if necessary.
