    Prepare the Apples

    Peel, core, and slice the Granny Smith apples into thin wedges. Place them in a large mixing bowl.

    Mix the Filling

    Add the cinnamon apple cider, granulated sugar, ground cinnamon, and lemon juice to the apples. Toss until the apples are evenly coated. Set aside to marinate for about 15 minutes.

    Make the Dough

    In a large bowl, combine all-purpose flour, granulated sugar, and salt. Cut in the chilled unsalted butter using a pastry cutter or fork until the mixture resembles coarse crumbs.

    Form the Dough

    Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.

    On a floured surface, roll out one disc of dough to fit a 9-inch pie dish. Place the rolled dough into the dish and trim the edges.
