Pancake Batter

Method

Cooking Instructions

  1. 1

    Prepare the Batter

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined. In a separate bowl, mix the milk, egg, and melted butter. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix; small lumps are okay.

  2. 2

    Add Blueberries

Gently fold in the fresh blueberries into the batter, being careful not to break them.

  3. 3

    Cook the Pancakes

Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray. Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for an additional 2 minutes or until golden brown.

  4. 4

    Serve

Serve the pancakes warm with maple syrup, additional blueberries, or your favorite toppings.
