Prep the Chicken
Rinse the chicken pieces under cold water and pat them dry with paper towels. Season with salt, black pepper, thyme, and allspice. Let marinate for at least 30 minutes.

Brown the Chicken
In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the marinated chicken pieces (in batches if necessary) and brown on all sides, about 5-7 minutes. Remove chicken and set aside.

Combine Ingredients
Return the browned chicken to the pot. Pour in the soy sauce, chicken broth, and add the brown sugar. Stir well to combine.

Simmer
Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 30-40 minutes, or until the chicken is cooked through and tender.

Finish and Serve
Add the scallions and adjust seasoning with additional salt and black pepper if needed. Serve hot over rice or with bread.
