Ackee and Saltfish

    Prepare Saltfish

    Soak the saltfish in water overnight to remove excess salt. Alternatively, you can boil it in water for about 20 minutes, changing the water halfway through.

    Sauté Vegetables

    In a frying pan, heat 2 tablespoons of cooking oil over medium heat. Add chopped onions, tomatoes, bell peppers, scallions, and minced garlic. Sauté until the vegetables are soft and fragrant.

    Add Ackee and Saltfish

    Drain and flake the soaked saltfish and add it to the sautéed vegetables. Gently fold in the ackee (drained if canned), thyme, and black pepper. Cook for about 5-7 minutes until everything is heated through and well combined.

Fried Dumplings

    Make the Dough

    In a large bowl, mix the flour, baking powder, and salt. Gradually add water until a soft dough forms. Knead for a few minutes until smooth.

    Shape and Fry

    Divide the dough into small balls and flatten them slightly. Heat oil in a deep frying pan over medium heat. Fry the dumplings in batches until golden brown on both sides, about 3-4 minutes per side. Drain on paper towels.

Fried Plantains

    Prepare Plantains

    Peel the ripe plantains and slice them diagonally into about 1-inch thick pieces.

    Fry Plantains

    Heat cooking oil in a frying pan over medium heat. Fry the plantain slices until golden brown on both sides, about 2-3 minutes per side. Remove and drain on paper towels.
