    Slice the Vegetables

    Thinly slice the onion and green bell pepper. Clean and slice the mushrooms.

    Toast the Buns

    Preheat your oven to 350°F (175°C). Place the hoagie rolls on a baking sheet and toast in the oven for about 5-7 minutes, until slightly crispy.

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the sliced onions and bell peppers, and cook for about 5 minutes until they start to soften. Add the sliced mushrooms and continue to sauté for another 3-4 minutes until all vegetables are tender.

    Add the Roast Beef

    Once the vegetables are cooked, add the shaved roast beef to the skillet. Season with salt and black pepper, and cook for an additional 2-3 minutes, stirring frequently until the beef is heated through.

Assembly

    Combine and Serve

    Divide the beef and vegetable mixture between the toasted hoagie rolls. Top each sandwich with 2 slices of Provolone cheese and 2 slices of Swiss cheese. If desired, place the sandwiches back in the oven for a few minutes until the cheese melts. Serve hot.
