Wings
Medium Sauce
Method
Preparation of Wings
Prepare the Wings
Preheat your oven to 425°F (220°C). Rinse the chicken wings under cold water and pat them dry with paper towels. Place the wings in a large bowl.
Season the Wings
Add salt, black pepper, and baking powder to the bowl with the wings. Toss the wings until they are evenly coated with the seasoning.
Cooking the Wings
Bake the Wings
Line a baking sheet with aluminum foil and place a wire rack on top. Arrange the wings in a single layer on the rack. Bake in the preheated oven for 40-45 minutes, turning halfway through, until the wings are crispy and golden brown.
Making the Sauce
Prepare the Medium Sauce
In a small saucepan over medium heat, combine the hot sauce, butter, garlic powder, cayenne pepper, honey, and vinegar. Stir until the butter is melted and the sauce is well combined. Bring to a simmer and let it cook for about 5 minutes.
Tossing and Serving
Toss the Wings in Sauce
Once the wings are baked, remove them from the oven and place them in a large bowl. Pour the medium sauce over the wings and toss to coat them thoroughly.
Serve
Transfer the coated wings to a serving platter. Serve hot with celery sticks and blue cheese dressing on the side.
