Peel the onions and slice them into 1/4 inch thick rings. Separate the rings and set them aside.

In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and paprika. Whisk until well combined.

Add Sparkling Water
Gradually add the cold sparkling water to the dry ingredients, whisking until the batter is smooth and free of lumps. The batter should be thick enough to coat the onion rings.
Frying the Onion Rings

Heat the Oil
In a deep frying pan or a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to check the temperature.

Dip each onion ring into the batter, allowing any excess to drip off. Make sure each ring is evenly coated.
