Prepare the Dough

Activate the Yeast
In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.

Mix Ingredients
In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.

Knead the Dough
Mix until a dough forms, then knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.

Let Rise
Place the dough in a greased bowl, cover with plastic wrap, and let it rise in a warm place for about 1 hour or until doubled in size.
Prepare the Filling

Mix Filling Ingredients
In a bowl, combine pepperoni slices, shredded mozzarella cheese, and ricotta cheese. Mix well and set aside.
Prepare the Marinara Sauce

Assemble the Pizza Logs

Roll Out the Dough
Once the dough has risen, punch it down and turn it out onto a floured surface. Roll it out into a large rectangle, about 1/4 inch thick.

Cut and Fill
Cut the dough into rectangles, about 4x6 inches. Place a portion of the filling on one end of each rectangle. Fold the dough over the filling and seal the edges by pressing them together.

Prepare for Baking
Preheat your oven to 425°F (220°C). Place the filled logs on a baking sheet lined with parchment paper.

Bake in the preheated oven for 15-20 minutes, or until golden brown.
