Prepare the Peppers
Wash the jalapeño and poblano peppers thoroughly. Cut the jalapeños in half lengthwise and remove the seeds. For poblano peppers, cut them in half and remove the seeds as well.

In a mixing bowl, combine the cream cheese, Mexican blend cheese, queso fresco, and Monterey Jack cheese. Mix until well combined.

Stuff the Peppers
Using a spoon, fill each jalapeño and poblano half with the cheese mixture, ensuring they are generously filled.

Bread the Peppers
Dip each stuffed pepper first into the flour, shaking off the excess. Then dip it into the beaten eggs, allowing any excess egg to drip off, and finally coat it with the seasoned bread crumbs. Place the breaded peppers on a plate.

In a large skillet or frying pan, heat the cooking oil over medium heat. Once hot, carefully place the breaded peppers into the oil, frying them in batches if necessary. Cook for about 3-4 minutes on each side until they are golden brown and crispy.
