Fried Bologna (texas Roundsteak) Recipe

Preparation of Vegetables

    Sauté the Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and bell peppers, sprinkle with salt and black pepper, and sauté for about 5-7 minutes, or until they are soft and slightly caramelized. Remove from heat and set aside.

Cooking Bologna

    Fry the Bologna

    In the same skillet used for the vegetables, add the thick-cut bologna slices. Cook over medium heat for about 3-4 minutes on each side, or until they are crispy and golden brown. In the last minute of cooking, place a slice of provolone cheese on each piece of bologna to melt.

Assembling the Sandwich

    Build the Sandwich

    Slice the Costanza rolls in half and lightly toast them if desired. Place a piece of the melted bologna with cheese on the bottom half of each roll. Top generously with the sautéed peppers and onions, and then place the top half of the roll over the fillings.
