    Wash and Cut Potatoes

    Wash 4 Russet potatoes thoroughly under cold water. Peel the potatoes if desired, then cut them into long, even strips about 1/4 inch thick.

    Soak Potatoes

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch. This will help them become crispier when fried.

Frying

    Heat Oil

    In a large deep pot or fryer, heat 4 cups of vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

    Drain and Dry Potatoes

    After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture.

    Fry the Potatoes (First Fry)

    Carefully add the potatoes in batches to the hot oil. Fry for about 4-5 minutes until they are soft but not browned. Remove and drain on paper towels.

    Increase Oil Temperature

    Increase the oil temperature to 375°F (190°C) for the second fry.

    Return the partially cooked potatoes to the hot oil in batches and fry for another 3-4 minutes or until golden brown and crispy. Drain on paper towels.
