Season Cod Fillets
Pat the cod fillets dry with paper towels. Season both sides of the fillets with salt and black pepper. Set aside to marinate for about 15 minutes.

Prepare the Batter
In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, paprika, and garlic powder. Mix well. In a separate bowl, whisk the egg and then add the cold sparkling water. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. The batter should be thick but smooth.

Fry the Cod
Heat oil in a deep frying pan or a deep fryer to 350°F (175°C). Dip each seasoned cod fillet into the batter, allowing excess to drip off. Carefully place the battered fillets into the hot oil and fry for about 4-5 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.

Assemble the Sandwich
Toast the brioche buns lightly. On the bottom half of each bun, place a lettuce leaf followed by a fried cod fillet, a slice of tomato, and a generous dollop of tartar sauce. Top with the other half of the bun. Serve with lemon wedges on the side.
