Donut Preparation
- 1
Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.
- 2
Combine Wet Ingredients
In another bowl, whisk together the whole milk, eggs, melted unsalted butter, and vanilla extract until smooth.
- 3
Combine Mixtures
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- 4
Preheat Oven
Preheat your oven to 350°F (175°C) and grease a donut pan.
- 5
Fill Donut Pan
Transfer the donut batter into a piping bag and fill each cavity of the greased donut pan about 2/3 full.
- 6
Bake
Bake in the preheated oven for 10-12 minutes, or until the donuts are golden and a toothpick inserted comes out clean.
- 7
Cool
Let the donuts cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Creme Brûlée Filling Preparation
- 8
Heat Cream
In a small saucepan, heat the heavy cream over medium heat until it starts to simmer. Remove from heat.
- 9
Whisk Egg Yolks
In a separate bowl, whisk together the egg yolks, 1/2 cup granulated sugar, and a pinch of salt until pale and fluffy.
- 10
Combine Mixtures
Slowly pour the hot cream into the egg yolk mixture while whisking continuously to temper the eggs.
- 11
Add Vanilla
Scrape the seeds from the vanilla bean into the mixture and stir to combine.
- 12
Bake Filling
Pour the mixture into ramekins and place them in a baking dish filled with water. Bake at 325°F (160°C) for about 30 minutes, or until set. Let cool completely.
Assembly and Topping
- 13
Fill Donuts
Once the donuts are completely cool, use a piping bag to fill each donut with the cooled crème brûlée filling.
- 14
Caramelize Sugar
Sprinkle 1 tablespoon of granulated sugar on top of each filled donut. Using a kitchen torch, carefully caramelize the sugar until it forms a crispy top. If you don’t have a torch, you can broil the donuts under the oven broiler for 1-2 minutes, watching closely.
- 15
Serve
Let the caramelized sugar harden for a few minutes before serving. Enjoy your crème brûlée donuts!
