Prepare the tortillas
Cut each corn tortilla into 6 equal triangles to create chips.

Heat the oil
In a large skillet, heat the vegetable oil over medium-high heat until hot but not smoking.

Fry the chips
Working in batches, add the tortilla triangles to the hot oil and fry until golden brown and crispy, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels.

Season the chips
While still warm, sprinkle with a little salt to taste.

Mix the salsa
In a medium bowl, combine the chopped tomatoes, red onion, cilantro, jalapeño, lime juice, salt, and black pepper. Stir well to combine.

Adjust seasoning
Taste and adjust seasoning as necessary, adding more salt, lime juice, or pepper if desired.
