Method
Chicken Preparation
- 1
Prepare the Chicken
Preheat your oven to 375°F (190°C). Take the boneless, skinless chicken breasts and place them between two pieces of plastic wrap. Use a meat mallet to pound the chicken to an even thickness of about 1/2 inch.
- 2
- 3
Coat the Chicken
Dredge each chicken breast in the flour, shaking off the excess. Next, dip it into the beaten eggs, allowing any excess to drip off. Finally, coat the chicken in the breadcrumb mixture, pressing gently to adhere.
- 4
Cook the Chicken
In a large skillet, heat olive oil over medium heat. Once hot, add the breaded chicken breasts and cook for about 4-5 minutes per side, or until golden brown and cooked through. Transfer the chicken to a baking dish.
Sandwich Assembly
- 5
Add Sauce and Cheese
Pour the marinara sauce over the cooked chicken breasts, ensuring they are well covered. Sprinkle the shredded mozzarella cheese and grated Parmesan cheese evenly on top.
- 6
Bake the Sandwiches
Place the baking dish in the preheated oven and bake for about 15 minutes, or until the cheese is melted and bubbly.
- 7
Assemble the Sandwiches
While the chicken bakes, slice the hoagie rolls open lengthwise. Once the chicken is done, remove it from the oven and place each chicken breast inside a hoagie roll. Top with fresh basil leaves.
- 8
Serve
Serve the Chicken Parmesan Sandwiches warm, with additional marinara sauce on the side if desired.
